One of the best things about gardening is growing varieties of vegetables you have a hard time finding in any grocery store.
I’m sad that we didn’t have any round 8-ball zucchini this year but we did get some pale green Peter Pan squashes in a hybrid organic scallop squash mix.
Our spaghetti squashes succumbed to the squash boring beetle.
The picture is of the squash stuffed with gluten-free bread crumbs, fresh herbs and olive oil, fresh cherry tomato sauce, and mounds of new red potatoes with
sauteed beet greens. Everything except the bread crumbs & potatoes & olive oil came from our backyard. It was the perfect way to celebrate a relatively successful summer gardening week in the beginning of July. Have a happy 4th and if you garden it’s fun to celebrate a little independence from the grocery store.
